The polish seems to fill in the pores in the leather and lets a lot less water through. It also adds another layer of protection to the leather. I know my magnums after two years of use are far more waterproof now then they were when I got them. I even apply the polish to the fabric.
EDIT I also suffer from massive and wide feet. I wear a 13 f in the cf boots I believe. Its been a long time since I had the cadillacs. When it comes to runners I have to get new balance in the widest they come and they just barely fit. I have used bates, magnum, bellville and most recently oakley in there wide versions and have been very happy with them. My boot pile is getting a wee bit large. Yeah I know, but I have had crappy luck with the regular spray water proofing. It's good for the hard leather, but it always ruins the soft (plyable) leather.....and it needs to be redone periodically as well.
Besides, I always have a can on hand for spraying down the toys after a rain game. SHA DO

Sha Do, try bear fat for waterproofing. It's what we used to do, and gives you a perfectly good excuse to get a gun and hunt some bear.
Or you could just by some boring old spray. Winners (the store) had Oakleys for $60. I was in the one in my town just last night. And they were tan as well.
