createx

createx, tamiya and other model paints are a bit of an overkill on a job that's going to get destroyed anyway...
most big spray brands don't have a wide range of flat colors though

Would using the glossy paints then using a clear satin spray then sanding it very slightly with fine paper work?

yes.
you need to sand only if there's dust in your resulting coat.

if you can't obtain the right stuff (the right color with the right finish) just don't do it.
you might find the right shades at home depot.

I'm pretty sure that an Ultra Flat matte clearcoat will kind of make the finish more flat/matte. Try doing that over the glossy finish of the regular fusion stuff.

if you want to use airbrushed createx, spray the colors, then 2 or 3 coats of gloss, then 1 coat of flat. Gloss varnish will make your paint tougher.

Well I bought a flat white, primer grey, and flat black, and satin finish cause couldn't find matte so I'll try it out and see how it looks.

It will be shiny, however, with that colour palette, I'm guessing camouflage isn't your primary goal?

I wanna go for something like this (gf used photo shop to make it) but like I said, can't find the different shades of grey so I'll try white grey black.

you are not following my advice of not doing it as long as you don't have exactly the right colors, you will be disappoint.
also non-excel satin varnish will be glossy, it'll look like crap. (and you will be disappoint)
